Comfort Food Time Machine  (WHY FOOD MATTERS SERIES)

Meet Greg. He’s an American born, Southern California resident and early riser. It’s 4am, and Greg is on a very important mission; to return his mother, and her friends back to the best days of their childhood. Greg is not a quantum physicist, but a professional chef. He’s had numerous appearances on some of the most popular shows on American television, and he currently holds a prominent position at the same company that provides catering for the Hollywood Oscars.  Every morning he gets up extra early to create special meals at the retirement home at which his 83 year old mother is a resident.  He is highly skilled, but it’s his passion that enables him to create dishes that are truly special.

According to a report published by NPR in 2012, the average cost of a private room in a nursing home in America is $87,235.00.  In order to alleviate those costs, Greg’s family invested a small fortune in acquiring a small retirement home in the mid-eighties, where his mother became a resident.  Five years ago Chef Greg took over the position as head chef and made a very important discovery. Every day, Chef Greg creates faithful reproductions of the same dishes that she enjoyed as a child, and this makes them both extremely happy. What began as a cost saving initiative became a vehicle for his mother to return back to the happiest days of her childhood. 

This story is important because it addresses the high cost of healthcare in America, and the quality of life amongst its elderly. 

The food makes a positive impact on the retirement home residents because of the commitment and passion carried into each meal by Chef Greg- his concern for the happiness of his mother and the other residents,  who get to relive their youth through the comfort food of their childhood.

About: Greg
Chef Greg is a self-taught professional chef of Japanese descent currently living in Southern California.  He has made numerous U.S. television appearances (‘Cutthroat Kitchen’, ‘Kings of Fish’) and works as a chef for a Hollywood catering company.
